Regarding the Model 81, those can be classified as modern rifles. By 1936, when the Model 81 came out, the understanding of metallurgy, heat treatment, and precision machining as applied to firearms manufacture was as good then as it is today. But I might not say that regarding some of the Model 8s from the early 20th century.

Opinions on Remington Model 81 for deer?

Like to have one myself. There were 5 different grades of them and it was also chambered in the 25 Rem. on a custom order basis. I think the 300 Savage would be the way to go as far as ammo availability, and it's a natural born killer. The Model 81 was mfg. to be an improvement over the Model 8 and I think it probably was.

So I picked up a Model 8... in .308 winchester.

The .308 case is essentially just a .300 Savage case with a longer neck and a few slight dimensional changes. I hadn't given any thought to rechambering a Model 81 in .300 Savage to .308. It might work, but a major problem is that the .308 has an overall cartridge length (OAL) about .3" greater than that of the .300 Savage.
